Chocolate Raspberry Bliss Balls

There’s one snack I’ve always enjoyed making for YEARS now, and that’s protein balls. They’re a dense superfood powerhouse of a snack, great for on-the-go, and packed with so much flavor! I think you’ll start seeing more raw ball recipes from me because personally, it was like rekindling a long lost love once I started digging into a few of these. 😉

An awesome benefit to these homemade treats is that you can easily omit certain ingredients (say, if you’re not a fan of cinnamon or would rather swap out walnuts for another nut). As long as you have your liquids to bond with enough dry ingredients and you’re able to create a solid shape, you’re set! As I always say – experiment away. But first, you have to give this recipe a try:

INGREDIENTS

  • 1 cup raw walnuts
  • 1 cup unsweetened shredded coconut
  • 1/2 tbsp coconut oil, melted
  • 6 pitted organic Medjool dates
  • 1 tsp vanilla extract
  • 1 tbsp cacao powder
  • 1/8 tsp sea salt
  • Large palmful crushed freeze-dried raspberries plus more for garnish
  • 1/2 tsp Ceylon cinnamon
  • 1/4 100% cacao chocolate bar (no sugar added!)

DIRECTIONS

  • Using a food processor, blend walnuts, shredded coconut and dates
  • Add the rest of the ingredients and blend until mixture is well combined, about 2 minutes
  • Divide into tablespoon-sized balls. Roll balls in crushed freeze-dried raspberries
  • Freeze for 20 minutes for minimal time or refrigerate for 40 minutes. I enjoy mine best when refrigerating overnight!
