Yup, I just went there. Taking a bite into these tastes like you’re biting into fudge.
I have a sweet tooth. Though I’m not much of a dessert after dinner person (never was), I still like a little sweet decadence – especially CHOCOLATE. Unfortunately, a lot of desserts out there end up being way too sweet for me. Even milk chocolate itself is too over the top. Because of my moderate intake on fruit (natural sugars) and high intake on veggies, confections can be extremely overpowering.
But these… these energy bites are just right thanks to dates. This fruit has a grand nutrition profile with proven benefits such as being high in fiber and antioxidants, reduces inflammation, and is an excellent natural sweetener. That, I dig.

INGREDIENTS
- 11 medjool dates
- 1/4 cup cacao powder
- 3-4 tbsp cashew butter
- 1/4 cup rolled oats
- 1/4 tsp vanilla extract
- Pinch of sea salt
DIRECTIONS
- Add all ingredients to a food processor
- Pulse mixture until well blended (30 seconds to 1 minute)
- Divide into tablespoon-sized balls
- Eat right away (the inevitable) or pop in the fridge for later!
