Strawberry Cashew Bites

These. Are. GOLD. Jackpot!

Nuts have always been an important food choice for me. If I’m feeling a bit hungry and need something quick, I’ll grab a palmful of walnuts, hazelnuts, pistachios – a few of my current favorites. I also tend to munch on these after a workout since they’re a wonderful plant-based protein source! They are a very serious pantry staple in my household.

For a long time nuts had a bad rap of being high in fat, but the truth is we’re talking HEALTHY fat – which in turn aids in weight loss. I had to make this statement because here’s my next: don’t fear good fats. I repeat, don’t fear GOOD fats – they are a necessary nutrient for our bodies! 

And now, we’re experimenting with another favorite nut: cashews. These came out delightful.

INGREDIENTS

  • 1 cup cashews
  • 1 cup shredded coconut
  • 1/2 cup freeze-dried strawberries
  • 1 1/2 tbsp coconut butter
  • 1 1/2 tbsp maple syrup
  • 1 tsp vanilla extract
  • Pinch sea salt

DIRECTIONS

  • Combine all ingredients in a food processor and pulse for 30 seconds – 1 minute, until thoroughly blended
  • Divide using a cookie scoop and mold into balls. Refrigerate for 30 minutes and enjoy!
