Craving a burrito bowl? Well, crave no more. Skip the Chipotle run and get your cooking pants on, because this delicious and filling meal will leave you with plenty of leftovers for the next few days (cost-effective much?). It’s the perfect meal prep for on-the-go days; a simple reach into the fridge. It’s also SUPER quick to make & packed with colorful veggies and nutrients to keep you running throughout the day.
INGREDIENTS
- 3 tbsp avocado oil
- 1 pound organic ground turkey
- 1 cup germinated brown rice
- 3 cloves garlic
- 1 red onion
- 1 yellow pepper
- 1 orange pepper
- 1 red pepper
- 1 tbsp cumin
- 1 tsp chili powder
- 1 tsp sea salt
- 1/2 tsp black pepper
DIRECTIONS
- Heat nonstick pan on medium with avocado oil
- Chop onion and peppers (& remove seeds). Mince garlic (or use a garlic press)
- Cook rice to your preference (I use my Instant Pot)
- Sauté onion and peppers for 5 minutes
- Add turkey, garlic, & seasoning and cook for 11 minutes or until fully browned
- Mix in rice
Top with bean dip, avocado, and hemp seeds with a side of GF tortilla chips. And if you’re into spicy foods like I am, add in some of that HOT sauce! Dig in!
