I haven’t owned a waffle maker in YEARS, but was surprised to find the perfect mini waffle maker at Target for $10. Let’s be honest, you can never go wrong with a gadget that creates a fun breakfast, is an easy clean-up and is small enough to be quietly hidden among the other heftier appliances in the kitchen (if you’re not a fan of kitchen clutter, you understand).
I’ve also been on a cherry kick! My favorite fruits are those in the berry family, but I feel it’s always good to branch out when I find myself eating the same routine foods. New foods = new nutrients to take in. So far I’ve been incorporating cherries in my smoothies, on the side as a snack, and now, waffles! 🙂
INGREDIENTS
Waffle mix:
- 1/2 cup Simple Mills Almond Flour Waffle Baking Mix
- 1 egg
- 2 tbsp oat milk
- 2 tbsp avocado oil
- 1 scoop collagen peptides
- 1 tbsp vanilla protein powder
- 1 tbsp chia seeds
Toppings:
- Shaved almonds
- Pitted dark sweet cherries (frozen)
- Trader Joe’s Organic Vermont Bourbon Barrel Aged Maple Syrup
DIRECTIONS

- Allow waffle maker to heat up
- Combine all waffle mix ingredients until well blended
- Transfer mix to glass measuring cup (for easier pouring)
- Spray waffle maker cooking surface with cooking spray. Pour mix and cook per waffle maker’s instructions
- Warm up frozen cherries and top waffles with cherries, almonds & maple syrup!
